I scream, you scream, we all scream from ice cream. Yes, I said from. The reason for this is because I’m lactose intolerant and while I love this dreamy and creamy frozen treat, it definitely doesn’t love me back. I’m happy to say I found an alternative to the pain and discomfort “regular” ice cream causes me. I now enjoy Lactaid ice cream. It comes in many flavors, and it tastes great. It’s made with 100% real milk and cream, just without the lactose, so it’s easier for some of to digest. Now I can enjoy ice cream just as much as everyone else without the fear of the consequences later.
Lactaid flavors include Butter Pecan, Cookies & Cream, Chocolate, and Vanilla. Recently, they introduced two new and amazing flavors: Salted Caramel Chip and Berry Chocolate Crumble. Are you hungry yet?
Here’s the info on those two delicious concoctions.
Salted Caramel Chip Ice Cream is Sweet caramel swirls and chocolate chips are blended into smooth, premium ice cream. Berry Chocolate Crumble Ice Cream is made of ripe pureed berries and rich chocolate crumble, together in a lactose free ice cream. Don’t they both sound delicious? I couldn’t wait to try them.
And….
I really loved both of them, but I think I liked the Berry Chocolate Crumble more because it had a little bit of a crunch. Either one of them are great with all sorts of toppings – berry sauce, caramel sauce, chocolate sauce, crumbled cookies, nuts, cherries…you name it. There are so many different flavors melded together in these two that just about any topping goes great. Need some inspiration? Lactaid has provided me with an awesome recipe I’ll share with you at the end of this post.
Think about all the amazing flavors Lactaid Ice Cream Comes in and then think about all of the toppings you could put on them. How many creations could you come up with? Ready to have some delicious ice cream? Try a Snickerdoodle Cookie Sandwich!
- For the Snickerdoodle Cookies:
- ¼ cup butter
- ¼ cup shortening
- 2 eggs
- 1 teaspoon vanilla extract
- ½ cup brown sugar
- ¼ cup granulated sugar
- 1 ¾ cups flour
- ¼ teaspoon cinnamon
- ½ teaspoon baking soda
- ¼ teaspoon salt
- For the cinnamon sugar:
- 2 tablespoon granulated sugar
- ½ tablespoon cinnamon
- For the ice cream sandwiches:
- 2 cups LACTAID® Salted Caramel Chip Ice Cream
- Your choice of: (optional)*
- Sprinkles
- Crushed Pretzels
- Dark Chocolate Chips
- Toffee bits
- Mini Marshmallows
- Crushed Oreos
- Crushed Graham Crackers
- Melt the butter in a microwave in 20-second intervals. Allow to cool completely, then whisk in the eggs and vanilla.
- In a separate bowl, whisk together the sugars, flour, shortening, cinnamon, baking soda and salt.
- Stir the wet ingredients into the dry ingredients until just incorporated. Refrigerate dough for 30 minutes.
- Mix sugar and cinnamon in a shallow bowl.
- Preheat oven to 400ºF. Scoop the dough using a ¼ cup ice cream scoop or cup measurer.
- Flatten with the palm of your hand, then coat the cookie in cinnamon-sugar.
- Bake for 7-8 minutes on a greased baking sheet. Allow to cool completely.
- To assemble ice cream cookie sandwiches: Place baking sheet in freezer. Bring ice cream out of freezer to soften for 2 minutes.
- Prepare any toppings by placing them in shallow bowls.
- Working quickly: Lay one cookie top side down on a baking sheet. Using ⅓ cup ice cream scoop, scoop ice cream onto the cookie. Top with second cookie, pushing down lightly until the ice cream reaches the edges. Roll in desired toppings. Place on baking sheet in the freezer. Repeat.
- Serve immediately, or wrap individually in plastic wrap for longer-term storage.
