This time of year you can find just about everything imaginable flavored with Pumpkin or Pumpkin Spice. With Thanksgiving dinner just a few days away — I think it’s the perfect time to share this recipe for Pumpkin Buttercream Frosting! It’s made with the new I Can’t Believe It’s Not Butter! which is made from real, simple ingredients you can recognize like a delicious blend of plant-based oils, purified water and a pinch of salt. Who doesn’t love pumpkin pie, right? Surprisingly, many in my family aren’t big fans of pumpkin pie even though they love the flavors you find in pumpkin pie. I started making this Pumpkin Buttercream Frosting to add to cupcakes and cakes for an alternative to the traditional pumpkin pie dessert on Thanksgiving. It became a family favorite immediately!
Ingredients:
- 4 tbsp I Can’t Believe It’s Not Butter – room temperature
- 1/2 cup pumpkin puree
- 1/2 tsp vanilla
- 1/2 tsp nutmeg
- 1 tsp cinnamon
- 1/4 tsp ground all spice
- 1 tsp pumpkin pie extract
- 6 cups sifted powdered sugar
Instructions:
In the bowl of a large stand mixer begin blending the I Can’t Believe It’s Not Butter! with the vanilla, pumpkin pie extract, and the pumpkin puree.
Gradually add the powdered sugar, 1 cup at a time until the mixture reaches desired consistency for piping or spreading.
Add the spices to the frosting and blend on high for 1-2 minutes or until spices are well combined.
Fill a piping bag with the frosting and pipe onto your cupcakes or cake. You may also spread the frosting onto your treats with a knife.
