Have you ever experienced Dairy Envy? In case you’re not familiar, Dairy Envy is the feeling you get when you can’t enjoy dairy like everyone else around you – when the rest of the family is eating ice cream or a cheesy Italian dish or sipping some creamy hot chocolate and you can’t without suffering uncomfortable consequences. It’s not a fun feeling and it’s unfortunately not uncommon. Um, more people are lactose intolerant than you’d think.
This holiday season, when you’re entertaining, why not ask your friends and family if they have any dietary restrictions? I bet you’ll find that a lot of your guests will say that they do but never let you know before. It can be embarrassing to admit. No one wants to be “that” guest – the one that needs the “special” dinner, so we often suffer in silence.
I used to suffer from Dairy Envy all the time, but now I substitute Lactaid in everything that requires dairy. I enjoy Lactaid Ice Cream (my favorite flavor is Berry Chocolate Crumble), Lactaid milk in my coffee, and I’ve learned to use Lactaid in place of “regular” dairy in a lot of recipes.
A perfect example is this poppy seed pound cake. This is a favorite in my house, and until now, I wasn’t able to enjoy it. Now the entire family can indulge. The cake will definitely be on our table during the holidays, along with other lactose‐free treats thanks to Lactaid. One of my favorite things to make with Lactaid products is Caffe Carmocha Cupcakes. They’re delicious, and even better with a glass of Lactaid milk!
INGREDIENTS
- 1 (16 oz) box Sugar Free Classic Yellow Premium Cake Mix
- 3 large eggs
- 4 tsp Madagascar Bourbon Vanilla Bean Paste
- 1 cup LACTAID® Reduced Fat 2% Milk
- ½ cup unsalted butter, semi room temperature
- 1 tbsp poppy seeds
INSTRUCTIONS
- Preheat oven to 325°F.
- Next, in a medium sized bowl, or electric mixer, add the eggs, milk, poppy seeds, butter and vanilla bean paste. Once you’ve added them to the bowl, mix on low for approximately 45 seconds. Once you’ve finished mixing the wet mixture, add in the cake mix, and mix on medium high for approximately one minute, or until the mixture is nice and creamy.
- Next, spoon the batter into one greased and floured 9 x 5 inch loaf pan. Bake in a 325 oven for 45 to 60 minutes, or until a toothpick inserted near the center comes out nice and clean. Cool the pound cake in loaf pan for 10 minutes. Next, remove your loaf from the pan, and cool completely on wire rack. Serve with milk, and enjoy!

POPPY SEED POUND CAKE
Lactaid products have the same nutritional benefits and flavor as “regular” dairy, but everyone with dairy sensitivities can enjoy them too. The products are still 100% real dairy but without the lactose, and therefore without the discomfort it causes. Lactaid has really changed the way I think about food, especially during the holiday season.
