Um, who says breakfast has to be boring? These Strawberry Shortcake Muffins are lightly sweetened and utterly delicious. Stuffed with fresh strawberries and topped with a light glaze they are still a fairly healthy choice. Or in the afternoon find a quiet spot with a couple of these and a mug of your favorite coffee.
Ingredients:
- 2 cups all purpose flour
- ½ cup granulated sugar
- 2 Tbsp. cornstarch
- ¼ tsp. salt
- 2 tsp. baking powder
- ½ cup heavy whipping cream
- 1 egg
- 1 tsp. vanilla
- ½ stick (4 Tbsp.) melted butter
- 10-12 strawberries
Directions:
Preheat oven to 425℉. Wash and chop strawberries. Place cupcake liners in 12 muffin tin wells or grease pan well.
Stir together flour, sugar, cornstarch, salt, and baking powder.
In a separate bowl whisk together heavy whipping cream, egg, vanilla, and melted butter.
Mix wet ingredients into dry until just combined.
Scoop some batter into the bottom of liners.
Add a layer of diced strawberries.
Top with more batter to ⅔ full.
Bake for 15-17 minutes until edges are golden brown. Cool muffins completely.
Glaze – whisk together 1 Tbsp. powdered sugar and add cream 1 tsp. at a time until the consistency of gravy. Dip cooled muffins into glaze. Allow to sit until it has set.
