As a matter of fact, the holiday meals are actually the easiest parts of the entire season! It’s the rest that makes it a challenging time of year. The kids are running all over the place, the house needs to be cleaned before the endless stream of relatives comes through, there is shopping and wrapping and decorating to be done, “regular” meals to be made, etc. It’s stressful for everyone, and sometimes I get so busy that I don’t really have time to enjoy it all. Thankfully, my Ultimate Omelette Breakfast Pizza is a huge time-saver.
ULTIMATE OMELETTE BREAKFAST PIZZA
Um, thanks to Pillsbury, feeding my family breakfast is a little easier. I’ve come up with a new recipe for Ultimate Omelette Pizza using Pillsbury™ pizza dough, scrambled eggs, bell pepper, mushrooms, bacon, green onions, Canadian bacon and, of course, lots of cheese. Doesn’t it look delicious?
It’s the perfect holiday breakfast. Making it is so simple and easy (full instructions below) and you can make it as much or as little as you’d like. It’s customizable for picky eaters too, so the kids don’t complain. Breakfast pizza is a fabulous option if extended family sticks around a few days after Thanksgiving or Christmas as well.
I’ve always counted on Pillsbury products for delicious meal ideas. Especially during the holidays I get very creative. For example, I’ve been known to use the croissant rolls to make ham and cheese braids, pizza puffs, stromboli, and even mini a apple pies. Looking for a quick way to spruce up leftovers? Stick them in a croissant. That’s one of my favorite tricks. It’s quick, easy, delicious, and you look like a gourmet chef! Anyhoo, here’s the recipe.
- 1 can (13.8 oz) Pillsbury™ refrigerated classic pizza crust
- 4 large eggs, lightly scrambled
- 4 pieces of bacon, lightly cooked and coarsely chopped
- Bell pepper, you can use as much as you like.
- 2 mushrooms, chopped
- 1½ cups Italian blend cheese
- 1 (6 oz.) package of Canadian Bacon
- green onions, for garnish
- red onion, optional
- salsa, optional
How to make it:
First, preheat your oven to 350 degrees.
While your oven is pre-heating, take the eggs and scramble them lightly, then set aside. Next, in a medium skillet, brown the bacon, and remove it before it starts to crisp, then set aside. Next, remove the pizza dough from the container and place on a sheet of parchment paper.
Once you’ve place your crust on the parchment paper, layer the Canadian bacon in 4 rows until the pizza is fully covered.
Once you’ve layered the Canadian bacon, place the bacon pieces on the Canadian bacon until it’s evenly spread out.
Next, take the lighted scrambled eggs and crumble them atop the bacon and Canadian bacon.
Then sprinkle a little bit of cheese on top of the pizza.
Then place the bell pepper on top…you can add as much or as little as you like.
Then add the mushrooms.
Then top with remaining cheese and garnish with green onions. Cook for 15 to 20 minutes, or until crust is lightly browned. Serve immediately.

Of course I picked up all the ingredients for the breakfast pizza at Safeway (y’all know how much I love Safeway). I do the majority of my shopping there because the staff is very friendly and the prices are always great. I can always count on finding fresh produce and meats there too even during the holiday season. Right now, Safeway is my second home. It seems that every time I turn around I’m missing an ingredient for Christmas cookies or I need some more bathroom cleaner or laundry detergent. I’ve been to Safeway four times already this week!
