Does anyone else struggle to make sure their kids eat nutritious foods in the summer months? They’re coming and going from sports and friends’ houses and other activities so much, that I’m often counting on them to make great choices while they’re not in my sight. My kids are pretty good about it because I’ve been teaching them about good nutrition for years, but it wasn’t always that way. When they were little kids, they’d gladly grab a candy bar over the fresh fruit any day of the week.
AND..
With this in mind, I’ve partnered with Yoplait to make a nutritious and delicious recipe that will suit both moms and kids’ wishes. So I went to Walmart and bought some fresh green apples, coffee cake, and Yoplait Greek yogurt. I cut up the apples and crumbled the cake and then mixed them with the yogurt to make mini apple crumb cake parfaits. I have to say they came out really well! I love that they’re both better for you and just as tasty, if not more tasty, than a piece of candy. They make a great snack, or even a dessert!
MINI CINNAMON STREUSEL APPLE CRUMB CAKE PARFAITS
You’ll be able to make two 4.oz jelly jars with the below ingredients.

INGREDIENTS
- Yoplait Greek Yogurt
- Green Apple, peeled and diced
- Pecans, for topping
- Cinnamon Streusel Coffee Cake (or crumb cake), finely crumbed
- Cinnamon, just a pinch for flavor
Directions…
In two 4 oz. jelly jars, take two cinnamon streusel coffee cakes and crumble them up and press the crumbled cake firmly into the jars. You can use coffee cake or any other cake that crumbles easily.
Open the Yoplait Greek yogurt, then take a pinch of cinnamon and mix well. You can use more, if you like. Now distribute the Greek yogurt/cinnamon mixture evenly into each jar.
Now take the diced apples and generously place them on top of the yogurt/cinnamon mixture.
Top with pecans, and serve.
