Waffle Cone Carrot Cakes

Do you love carrots? Who doesn’t, right? These sweet little waffle cone carrot cakes are perfect for Easter dessert or to add to an Easter basket. They would make an adorable display on your Easter buffet. These tasty little waffle cone carrot cakes are quite simple to make and the combination of textures is wonderful. Are y’all drooling yet?

Ingredients:

  • 1 box waffle cones
  • 1 premade cake
  • 2 cups buttercream frosting
  • 1 package each red, yellow, and green candy melt

Directions:

Begin by crumbling the cake into fairly small crumbs. Mix the cake with the buttercream frosting. There should be more cake than frosting and it should stay crumbly.

Carefully pack the waffle cones with the cake and frosting mixture. Pack a small ball of cake mixture and press onto the top of the cone. Freeze the filled cones for 10-15 minutes.

While cones are chilling, melt a mixture of yellow and red candy melts according to package instructions. When candy melt is mixed, it will be a perfect orange coating for the cones.

Remove cones from the freezer and dip into the candy melt, holding the cone by the tip. Coat the entire cone with the candy melt, including the rounded cake. Set cone on a piece of wax paper with the point up. Add a bit more candy melt to cover where you were holding it. Allow cones to set until candy melt has hardened.

While you wait for the candy melt to harden on the cones, melt the green candy melt according to package instructions. Drizzle a small amount of green candy melt onto your parchment paper in the shape of stems as shown.

When the orange coating is hard, add a small amount of green to the rounded end. Then carefully remove the stems from the parchment paper and add to the carrot tops. Allow cones to set until all candy melt is hard.

The combination of the moist cake mixture, the crispy waffle cone, and the chocolate candy coating is really unique and wonderful!

You could display these in a basket, in a flower pot filled with crushed chocolate cookies, or down the center of your Easter table. You could individually package these adorable carrots for take away treats as well.
